Coi Bien mai

Tourists who have once come to Phu Quoc cannot miss a chance to enjoy this dish. What is it? It is the two pieces of muscle that connect the two shells of the Bien Mai surf clam. If you are a much-travel person, you may have had chance to experience the surf clam in other coastal regions. Coming to Phu Quoc, you will also have chance to enjoy the surf clam, but not the same as that of other regions since other part of this kind of clam is not used except the twoside muscles.

Coi Bien Mai can be processed via various ways, each of which brings about distinctive delicious flavor. It can be fired with many kinds of mushroom, onion and green field cabbage. The chef can also add soy bean sauce into this dish to give it a local taste. However, the grilled may be considered the most delicious since it can maintain the original flavor of Coi Bien Mai. It will be soaked with salt and grinded chilly before grilled. The grilled Coi Bien Mai is crisper and tougher.

Gỏi Cá Trích (dish made of herring fish and vegetables)

Phu Quoc attracts tourists for its original and natural beauty of the landscape. Tourists can freely travel around the primitive forest to enjoy the fresh environment, relax at quiet charming beaches or wander to the port to buy various kinds of seafood. However, there is another dish (which is also made of seafood – herring fishes) that you should try. This dish can be found in almost any local restaurant with reasonable price. The fresh herring fishes are processed by fishermen and decorated with strange kinds of vegetables with different flavors. The sauce is prepared with good quality Phu Quoc fish sauce. All the material are combined together to make a delicious dish called “Gỏi cá trích” (can be found in Phu Quoc only).

At first, most tourists may feel a little afraid of this dish. However, when all the materials are rolled together in a rice sheet, the fishy flavor seems to disappear, in stead, there is only the sapid flavor of strange kinds of vegetables, the greasy flavor of the coconut. The pieces of herring fish is not fishy at all, they taste so delicious that the more you eat, the more you want.

This kind of wine is made from ripen myrtaceous fruits (Sim fruits) which can be found nowhere else in Cuu Long River Delta region except in Phu Quoc. In Phu Quoc, you can find thi kind of fruit everywhere. This kind of wine possesses a special flavor which can be compared to any kinds of imported wines.

Sim Wine is originated from Tay Nguyen; Tay Nguyen people have long applied Sim wine as a remedy for tiredness after hardworking days.

In order to produce good Sim wine, the input material must be selected carefully. The Sim fruits are grinded well then fermented with sugar with a reasonable ratio. After 40-45 days, the mixture will turn into a kind of wine with pink color, which we call Sim wine. This kind of wine taste like grape wine with the concentration of about 11,5%.

You should not misunderstand Sim wine with other kinds of wines made from Sim fruits like those made from the body, the root or leaves of Sim trees or Sim fruits soaked directly into wine without being fermented. In Phu Quoc, there are several households who are specialized in producing Sim wine for tourists with the quality being recognized by Kien Giang’s Department of Health, such as Thành Long, Sim Sơn.
